Zucchini Green Soup

This is a delicious and easy soup with a lovely green color to make when you want something light. Simply it’s a tasty and a favorite way to eat zucchini for the kids.
NOTES:
Zucchini Green is a type of Green Squash, but there are many other varieties of squashes that come in green color.
In summary, Zucchini is a green squash, but not all squashes are green.

Ingredients
6 servings
2yellow onion
large, finely chopped
6garlic cloves
minced
700gzucchini green
halved & thinly sliced
Salt
or to taste
1 teaspooncumin
1 teaspoonallspice
2 cupsvegetable broth

Instructions
Step 1
Heat oil in a pot over medium heat, add onions and garlic, cook for 5 minutes, add chopped green zucchini, spices & cook for 5 more minutes, add the broth, bring to a boil over high heat, reduce heat to medium-low, simmer, undisturbed, until the vegetables are tender, about 10 minutes.
Step 2
While the zucchini is cooking, fry the baby spinach in a skillet with a little oil for 5 minutes.
Step 3
Add all of your sauce ingredients to the zucchini pot, over low heat, add the sautéed spinach and blitz with a hand mixer until completely puréed, then simmer Uncovered for 10 minutes.
Step 4
Season with salt, divide among serving bowls, sprinkled with chopped basil or parsley and serve with croutons or toasted bread.
