Star-gazer Vegetable Soup

Instructions

Step 1
Cut the pepper into quarters, removing the seeds and core. Chop the courgettes and carrots lengthways into 5mm slices.
Step 2
Using tiny pastry cutters, stamp out shapes from the vegetables or use a very sharp knife to cut the sliced vegetables into stars and other decorative shapes.
Step 3
Place the vegetables and stock in a pan and simmer for 10 minutes, until the vegetables are tender. Season to taste with salt and pepper
Step 4
Meanwhile, place the vermicelli in a bowl with boiling water and set aside for 4 minutes. Drain, then divide among 4 four warmed soup bowls. Ladle over the soup and serve with fresh bread.
