Step 1
Heat olive oil in a large soup pot over medium heat. Once heated sauté your diced onion and peppers in olive oil until the onions are translucent and the peppers are tender. Sprinkle in your seasonings of choice! Cook for another minute then deglaze with veggie broth. Pour in crushed tomatoes, diced tomatoes, beans, and add in the sweet potatoes. Let simmer on low for about 30 minutes stirring occasionally- until the sweet potatoes are soft and chili reaches desired about of thickness. Let cool before serving! Top with all your favorite chili toppings :) Enjoy!
