Saucy beans - white beans, tomato, swiss chard

This was inspired by what I can recall of a SimpleGreenSmoothies recipe from one of their cleanses. This one I make now for meal prep to get through the work week. Sometimes I start a pot of beans from scratch and use those in the recipe; canned also works.

Step 1
1. Start with cooking a pot of white beans; I pour boiled water over beans for a quick soak. Once beans doubled in volume, drain beans. Transfer to a pot, cover with a volume of fresh water and a generous amount of salt. Bring to boil, and reduce heat to medium high to cook beans. Canned beans or chickpeas definitely work too.

2. Saute pan on medium heat. Add olive oil to sautee onions. Cook 5 minutes. When onions translucent, add garlic, garlic plus, and lemon pepper. Cook another 1-2 minutes until fragrant.

3. Stir in tomatoes, tomato paste. Cook 5 minutes. Add cumin, paprika.
Step 4
4. Spoon some white beans into the sauce. Cook about 10-15 minutes, stirring occasionally.
Step 5
5. Make a well in the middle of the sauce and add all the swiss chard. Sprinkle with lemon pepper (or a bit of salt) and squeeze over the juice of a half lemon. Cover the pan to allow the greens to steam, about 5 minutes.

6. Stir everything together and taste to check seasonings. It's ready to eat at this stage, or simmer a bit longer if you have the time

7. Serve on its own, with bread, over rice or couscous
