Instructions

Step 1
Begin by cutting the onion into julienne strips.

Season the steak with salt and pepper, ensuring that you rub the seasoning evenly all over the steak. Let it rest for at least 20 minutes.

After seasoning, drizzle a bit of olive oil over the steak, and then use a rolling pin to gently flatten it.

Preheat a non-stick skillet over medium-high heat and cook the steak for 3-4 minutes per side for a medium-rare doneness. Adjust the cooking time to your preference. Let the steak rest for a few minutes before slicing it into thick slices.

In the same skillet used for the steak, cook the onions. Add a pinch of salt and pepper, along with some brown sugar, once they start to get brown add the balsamic vinegar, and sauté the onions until they start to caramelize.

While the onions are cooking, slice your Swiss cheese into thick slices if it's not already pre-sliced.

In another non-stick skillet, place as many cheese slices as needed to cover one side of each slice of bread. When the cheese starts to melt and bubble, add just a pinch of salt and pepper and place the bread on top of it. Press down firmly with your hand or spatula to ensure the cheese adheres to the bread.

To assemble the sandwich, follow this order: on the cheese-covered bread, add a layer of mayonnaise, mustard greens, or kale, the sliced meat, and the caramelized onions on top of the meat. In the other cheese-covered bread slice, add the mustard.
