This Paneer cheese has a beautiful texture and is so easy to make . You can use it in a multitude of ways my favorite way is to make an Indian spinach paneer dish called saag paneer which I will be posting tomorrow . Enjoy

Instructions
Step 1
Pour the milk into a sauce pan then heat on medium stirring continuously. Make sure you use full fat milk . You want to slowly bring this to a boil don’t do it quickly as you want the milk to heat evenly

Step 2
Once it gets to a boil lower the heat to low and let it simmer away then slowly add 4 tbsp lemon juice stirring at the same time . You will see the curds start to separate form the whey . Stir until all the curds have separated . It will look like white clumps with yellow liquid

Step 3
Pour this into a Muslin cloth lined sieve over a bowl to strain it out then squeeze the excess liquid out . Pour out the whey you can use this for smoothies or pancakes . Now place a dish on top of the sieve and weigh it down with some cans of food or I use my very heavy pestle and mortar . Put in the fridge for 1 and a half hours
Step 4
After 1 1/2 hours the cheese is firm and is ready to use . Enjoy
