Instructions

Step 1
Season beef with salt and pepper in large bowl, toast in flour, coating on all sides
Step 2
Heat vegetable oil in large, heavy bottom pot over medium heat. Working in batches to avoid overcrowding the pot, fry the beef until it is browned on all sides. Should take 3-5 mins per batch; add 1 more tbsp of oil for each batch. Transfer cooked beef to another bowl and set aside
Step 3
Using same pot, fry carrots, onions, And celery until they've softened. Add garlic and tomato paste. Stirring occasionally, cook until fragrant and tomato paste is dark
Step 4
Add potatoes, broth, bay leaf, smoked paprika, thyme, worcestershire sauce, sugar, and red wine. Using a wooden spoon make sure to scrape browned bits off bottom of pot
Step 5
Lower heat and bring stew to boil. Return beef with its juices on pot. Cover with lid and let simmer for 45 min - 1hr, or until meat is cooked to your preference/tender. You may need to add more water during this time to avoid stew getting too thick.
Step 6
Remove bay leaf and thyme, garnish with parsley, serve with rice or ciabatta bread.
