Instructions

Step 1
Drain peaches and discard juice
Step 2
Grease a round cake pan. Dust with brown sugar and arrange peaches on bottom of pan.
Step 3
Sift together the flour, baking powder, and sugar.
Step 4
Melt the margarine.
Step 5
Beat the eggs.
Step 6
Beat together melted margarine and eggs. Add enough milk to make 1 cup (about ⅓ cup). Mix well, add the remaining brown sugar, and mix again.
Step 7
Add the dry ingredients to the wet ingredients and mix until smooth.
Step 8
Add vanilla and mix.
Step 9
Pour mixture over peaches.
Step 10
Steam for 1 hour in a steamer over boiling water.
Step 11
Let cool, then turn pudding over onto a plate. Serve hot or cold.
