Step 1
Preheat the oven to 350 degrees. Lay down parchment paper on a baking sheet.
Step 2
Combine pumpkin, sugar, oil, egg, and vanilla in a large bowl. Dissolve baking soda into milk then add to pumpkin mixture.
Step 3
Sift flour, baking powder, cinnamon, and salt together in a separate bowl. Add flour mixture to pumpkin mixture and mix until combined. Add chocolate chips and stir to combine.
Step 4
Using an ice cream/cookie scoop, drop a scoopful of cookie dough on the prepared baking sheet and bake until lightly firm, approximately 14-16 minutes for 12 large cookies or 8-10 minutes for 24 small cookies.
