For The Streusel
1 tablespoonunsalted butter
melted
2 tablespoonsall-purpose flour
2 tablespoonsrolled oats
⅛ teaspooncinnamon
1 tablespoonlight brown sugar

Instructions
To Make the Streusel
Step 1
1. In a small bowl, combine the butter, flour, oats, cinnamon, and brown sugar. Set aside.
To Make the Muffins

2. Preheat the oven to 375°F. Line six cups of a muffin tin with cupcake liners.

3. In a medium bowl, whisk together the butter, granulated sugar, and brown sugar. Add the egg white and whisk until smooth. Use a rubber spatula to fold in the salt, flour, cinnamon,and baking soda. Fold in the peaches last.

4. Divide the batter evenly among the six cups, filling them almost all the way to the top. Sprinkle the streusel over the tops of the muffins. Bake the muffins for 25 minutes. Let cool in the pan for 10 minutes, and then serve.
