7 ozunsalted butter
or margarine, softened
1 cupsugar
1lemon zest
grated
4eggs
medium, beaten
1 ⅔ cupself rising flour

Instructions
Step 1
Preheat the oven to 350 F. Grease and line an 8in cake pan. Cream together the butter, sugar, and lemon zest.

Whisk in the eggs a little at a time, adding a little flour to prevent the mixture from curdling. Fold in remaining flour. Spoon into the pan; smooth the top.

Bake for 20-25 minutes. Cool in the pan. Turn out and with a bread knife, remove the top layer of the cake, to make it even, then cut the cake in half horizontally.

Cream together the butter and confectioners sugar; add the milk and spread over one half of the cake. Sandwich together. Wrap in plastic wrap and chill for two hours.

Warm the apricot jam and spread over the top. Roll out the marzipan to an 8in square and place on top of the cake. Cut the cap into 25 cubes.

Mix the fondant icing sugar and water until smooth. Add the coloring. Holding over bowl, drizzle over each cube and decorate as desired.
