Instructions
Step 1
In a small bowl, dissolve the yeast in warm water and let it sit for about 5 minutes, until frothy.
Step 2
In a large mixing bowl or the bowl of a stand mixer, combine the warm milk, sugar, salt, melted butter, egg, egg yolk, vanilla extract, and 2 cups of flour. Add the yeast mixture and mix well.
Step 3
Gradually add the remaining flour, kneading until the dough is smooth and elastic, about 5-7 minutes.
Step 4
Place the dough in a greased bowl, cover, and let rise in a warm place until doubled in size, about 1 to 1.5 hours.

Once the dough has risen, turn it out onto a lightly floured surface and roll it to 1/2-inch thickness. Cut out donuts using a round cutter, and place them on parchment-lined baking sheets.

Cover the donuts and let them rise again for about 30 minutes.

While the donuts are rising, prepare the custard filling. In a medium saucepan, heat the milk until it begins to steam but not boil. In a separate bowl, whisk together the sugar, salt, vanilla, egg yolks, and cornstarch. Gradually whisk the warm milk into the egg mixture, then return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened. Remove from heat and stir in the butter. Cover with plastic wrap, pressing it directly onto the surface of the custard to prevent a skin from forming, and refrigerate until chilled.

Heat the oil in a deep fryer or large deep skillet to 350°F. Fry the donuts, a few at a time, until golden brown, about 1-2 minutes per side. Drain on paper towels.
Step 9
Once the donuts are cooled, fill a pastry bag fitted with a long, narrow tip with the custard. Insert the tip into the side of each donut and pipe in the custard filling.
Step 10
For the chocolate glaze, heat the cream, butter, and corn syrup in a small saucepan until it begins to simmer. Remove from heat and add the chocolate, stirring until smooth. Dip the tops of the filled donuts into the glaze, letting the excess drip off, then place on a wire rack to set.
