Ingredients

28 ounceextra-firm tofu
drained and pressed
2 tablespooncornstarch
2 tablespoonolive oil
1 cuprice noodles
soaked in hot water for 10 minutes
½ cupred onion
chopped
1 cupred bell pepper
chopped
3cloves garlic
minced
½ cupsoy sauce
4 tablespoonsrice vinegar
4 tablespoonslime juice
2 tablespoonbrown sugar
½ teaspooncrushed red pepper flakes
more or less for spiciness
½ cupchopped peanuts
Instructions
Step 1
Cut the tofu into 1-inch cubes.
Step 2
Toss the tofu with cornstarch.
Step 3
Heat the olive oil in a large skillet or wok over medium-high heat.
Step 4
Add the tofu and cook until golden brown on all sides, about 5 minutes.
Step 5
Drain the rice noodles and add them to the skillet or wok.
Step 6
Add the red onion, green bell pepper, and garlic and cook until softened, about 3 minutes.
Step 7
In a small bowl, whisk together the soy sauce, rice vinegar, lime juice, brown sugar, and red pepper flakes.
Step 8
Pour the sauce over the noodles and vegetables and toss to coat.
Step 9
Cook for 2-3 minutes, or until the noodles are heated through.
Step 10
Stir in the tofu, peanuts, and cilantro.
Step 11
Serve immediately.
