Instructions

Step 1
Rinse the quinoa in a fine-mesh sieve until the water runs clear.
Step 2
In a medium pot, combine the rinsed quinoa and vegetable broth. Bring to a boil over high heat.

Reduce the heat to low, cover the pot, and simmer for 15 minutes, or until the quinoa is cooked through and all of the liquid has been absorbed.

While the quinoa is cooking, heat the olive oil in a large skillet over medium heat.

Add the onion and cook until softened about 5 minutes.
Step 6
Add the zucchini, bell pepper, and cucumber and cook for 5-7 minutes, or until tender-crisp.
Step 7
Stir in the cooked quinoa, chopped fresh parsley, feta cheese, lemon juice, salt, and black pepper.
Step 8
Serve immediately.
