For the Harissa Yogurt Sauce:

Step 1
In a food processor, pulse together the chickpeas, onion, cilantro, parsley, cumin, coriander, paprika, salt, and pepper until a coarse mixture forms.

Form the chickpea mixture into 8-10 patties.

Heat 1 tablespoon of olive oil in a large skillet over medium heat.
