My father-in-laws chili recipe! Very warm, bold flavor. Spices can be adjusted to personal preference. He has always served his chili over spaghetti noodles, but eat it with whatever you prefer! This makes quite a lot. You can freeze it for leftovers. Prep/cook times are estimated.

Instructions
Step 1
Heat a large pot or ditch oven over medium heat. Add onion and cook ~2 min to soften. Add garlic and stir in until fragrant.
Step 2
Add ground beef, all other veggies, and spices. Cook until the meat is cooked through and veggies are softened, stirring to incorporate all ingredients.
Step 3
While meat and veggies are cooking, dissolve beef buillon cubes in a small amount of warm water. Dissolve flour in ~ 1/2-1 cup COLD water.
Step 4
Once meat is cooked through, add all cans of rotel, ranch style beans, and tomato sauce. Stir everything together, making sure to scrape the bottom of the pot. Bring to a slow boil.
Step 5
If you are making spaghetti noodles, now is a good time to get them started. Cook according to package instructions.
Step 6
Add dissolved beef bouillon and stir to incorporate.
Step 7
Next, add the flour/water mixture to thicken the Chilli. Stir constantly for 3-4 minutes, scraping the bottom of the pot. If you don’t stir, the flour mixture may sink to the bottom and burn in the bottom of the pot.
Step 8
Allow the chili to simmer for 15 minutes or so. After simmering, if there is any grease on top, it can be scooped off and discarded. (If you stir intermittently while it’s simmering, you won’t see the grease. Either way is fine, just depends if you want to remove some of the grease from the meat or not.
