Instructions

Step 1
Start by chopping up all your veggies to have them prepared to not have to worry about them later!
Step 2
Cut stew beef into 1 inch cubes. You can go larger however you will need to adjust your cooking time to account for the type of tenderness of the meat you'd like.
Step 3
Coat your beef peices in a mixture of flour and peper then In large pot Sear your beef cubes in about 2 tablespoon of olive oil.
Step 4
Remove the beef from the pan and add the vinegar, red wine and half of your seasonings. Cook over medium-high heat, scraping the pan to loosen any bits. Add beef broth, Bring to a boil, then reduce to a slow simmer.
Step 5
Add the beef back to the pot- it should take approximately 2 hrs for your beef to become tender during simmering. Be sure to check on this about every 30 minutes to skim the pot while beef is cooking.
Step 6
Once beef is tender, add In your onions, and carrots- covered for 10 to 15 mins. These tend to take little longer to soften.
Step 7
Add in the rest of your veggies and the rest of your seasonings. Let cook for about 30 minutes. Or until all veggies are tender.
Step 8
If the stew becomes dry- add some more beef broth- if the stew is too thin for your liking create a rue using flour, and butter. Then add to your stew mixing gently to prevent breaking up your beef and veggies. Be sure to check the stew to make sure the flavor is too your liking.
