Focaccia French Toast

This recipe was designed to be used with any of my sweet focaccia flavours: Cinnamon Roll, Apple Pie, Pumpkin Spice and Hot Chocolate Focaccia all work well here, but you can use slices of plain focaccia too. I particularly love focaccia for French toast because the maple syrup and butter melt into little puddles that settle into the bubbles in the bread.

Step 2
Whisk together the eggs, milk, sugar, cinnamon and vanilla in a rectangular dish that will accommodate the length of the sliced focaccia. If you’re not using a sweet focaccia to make this, add 1/2 teaspoon of extra sugar and a little bit of extra cinnamon into the mixture.
Step 3
With a serrated knife, cut three slices of focaccia from the slab. Each slice should be roughly 1-inch thick.
Step 4
Start heating a large frying pan to a medium heat.
Step 5
Lay the slices of focaccia into the rectangular dish and press them down into the egg mixture. Allow them to soak up the egg for about a minute and then flip them over and leave to rest while the frying pan finishes heating up.
Step 6
Just before you’re ready to cook the French toast, place a tablespoon of salted butter into the frying pan and brush it evenly over the entire surface.
Step 7
Place the slices of focaccia into the frying pan and cook over a medium low heat for about 3 minutes on each side, distributing the excess butter from the edges of the pan back to the middle before flipping the French toast over to cook on the second side.
Step 8
Plate up the French toast, top with a pat of salted butter, dust liberally with powdered sugar and then drizzle over as much warm maple syrup as you desire.
Step 9
This makes one generous portion that two people could share with some fresh fruit, eggs or bacon served alongside it. Scale up the recipe accordingly if feeding a larger group.
