Instructions
Step 1
1) Heat oil in a large skillet on medium heat. Add onion and a pinch of salt, and sauté until it begins to soften, about 5 minutes.
Step 2
2) Add garlic and sauté another 2 minutes. Add curry powder and mix well.
Step 3
3) Add potatoes, peas, chickpeas, and white beans. Mix well, reduce to medium-low heat, cover, and cook until potatoes are tender, about 20 minutes. Add more water if needed.
Step 4
4) Serve with brown rice
