This is the recipe I make when I don’t want to cook but want something fresh, filling, and healthy. It’s super versatile, and you can swap out the veggies for whatever you have in your fridge and use whatever protein you like. Tip all into one pan and leave to simmer until everything is cooked. Portion up and feel free to top with extra spring onion, coriander, and some chili.

Step 1
Add the coconut milk to a large saucepan. Fill the can up with water add pour in. Add the curry paste, stock cube, soy sauce, and fish sauce. Being up to a simmer.
Step 2
Prep all your veggies in the meantime.
Step 3
Mix the mixture, add the noodles to the center, and the veggies and prawns all around. Cover and let simmer for 4-5 minutes until everything is cooked.
Step 4
Serve and enjoy.
