Instructions

Step 1
Heat: In a large pot or Dutch oven, heat 1 tablespoon olive oil over medium heat. Add the onion and cook until softened, about 5 minutes.
Step 2
Spice it up: Stir in the garlic, cumin, paprika, chili powder (adjust to your spice level), and cayenne pepper (optional). Cook until fragrant, about 30 seconds.
Step 3
Veggie time: Add the sweet potato and chickpeas. Cook for 5 minutes, stirring occasionally.
Step 4
Simmer: Pour in the diced tomatoes and vegetable broth. Bring to a simmer, then cover and cook for 15 minutes, or until the sweet potato is tender.
Step 5
Finish it off: Stir in the lemon juice and cilantro/parsley. Season with salt and pepper to taste.
Step 6
Serve: Enjoy your Spicy Chickpea and Sweet Potato Tagine hot, with your preferred toppings like chopped fresh mint, cooked couscous, or toasted pita bread.
Step 7
Tips:
Step 8
For a thicker stew, mash some of the chickpeas with a fork before adding the lemon juice.
Step 9
Add a dollop of vegan yogurt or tahini for a creamy touch.
Step 10
Feel free to experiment with other herbs like basil, thyme, or rosemary.
Step 11
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop.
