Layer your favorite salad ingredients like greens, chopped vegetables, beans, and grains in a mason jar. Dress with a vinaigrette or lemon juice and olive oil. Shake well before eating!

Ingredients
4 servings
For the Salad:
4 cupsarugula
or other leafy greens
2 cupscherry tomatoes
halved
2 cupscucumber
diced
2 cupsquinoa
cooked
16 ouncescan chickpeas
drained and rinsed
0.5red onion
diced
¼ cupfresh parsley
chopped
salt
to taste
pepper
to taste
For the Lemon Garlic Dressing:
Instructions
Step 1
In a small bowl, whisk together the ingredients for the dressing. Distribute evenly among mason jars so that the dressing is a the bottom of each.
Step 2
Next, add chickpeas, red onion and fresh parsley evenly into each jar and give a little mix. Then layer with tomatoes, cucumber, quinoa, and topping it last with fresh arugula.
Step 3
Store in the fridge until ready to eat. To serve, either dump out and enjoy or shake it up and eat right from the jar!
