For the Peanut Butter Centers:
½ cupcreamy natural peanut butter
no added sugar
2 tablespoonshoney
or maple syrup
1 tablespoonunsweetened cocoa powder
salt

For the Chocolate Coating:

Step 1
Prep your liners: Line a mini muffin tin with cupcake liners.
Step 2
Peanut butter magic: In a small bowl, mix together the peanut butter, honey or maple syrup, cocoa powder, and salt (if using) until smooth and creamy.
Step 3
Fill the cups: Spoon the peanut butter mixture into the prepared cupcake liners, filling them up to about 3/4 full.
Step 4
Chill out: Place the filled cups in the freezer for at least 15 minutes, or until the centers are firm.

Chocolate dip: Melt the dairy-free chocolate chips in a double boiler or microwave (in 30-second bursts, stirring in between, until melted). If the chocolate is too thick for dipping, stir in a little coconut oil to thin it out.
Step 6
Coat and set: Remove the chilled cups from the freezer and carefully dip each one in the melted chocolate, coating them completely. Gently tap the cup against the bowl to remove any excess chocolate. Place the coated cups back in the muffin tin and return them to the freezer for another 10-15 minutes, or until the chocolate is set.
