Step 1
Roll crackers fine, add sugar, cinnamon and butter; mix well.
Step 2
Grease pan, press mixture with fingers on sides first then bottom.

If using handmixer use high speed and cream until there are no lumps. If using standing mixer, used speed for creaming.
Step 4
Beat eggs and sugar till light and lemon color.
Step 5
Add and beat rest of ingredients, except heavy cream.
Step 6
Beat till smooth, about 20 minutes. Then add heavy cream, beat till stiff.
Step 7
Pour into crust, bake for 1 hour. Do NOT open oven door while baking. When done, leave oven door open (shut off oven) for 1 hour more with cake in it to cool off.
