18 ouncesboneless skinless chicken breasts
or thighs, cut into bite-sized pieces
1 tablespoonchili powder
1 teaspooncumin
½ teaspoonsmoked paprika
¼ teaspooncayenne pepper

15 ouncesdiced tomatoes

10 ouncescan black beans
drained and rinsed
½ cupchicken broth
low-sodium preferred
¼ cupfresh cilantro
chopped, optional

Instructions
Step 1
Heat it up: Set your Instant Pot to "Saute" mode and add olive oil. Heat until shimmering.
Step 2
Soften and sizzle: Add onion and bell pepper, cook until softened, about 5 minutes. Stir in garlic and cook for an additional minute until fragrant.
Step 3
Spice it up: Add chicken pieces, chili powder, cumin, smoked paprika, and cayenne pepper (if using). Stir to coat the chicken in spices.
Step 4
Pressure cook: Pour in the diced tomatoes, black beans, and chicken broth. Stir to combine. Close the lid and pressure cook on high for 10 minutes.
Step 5
Release and relax: Once the cooking time is complete, let the pressure release naturally for 10 minutes, then do a quick release for any remaining pressure.
Step 6
Finish and fiesta: Open the lid and stir the mixture to combine. Taste and adjust seasonings with salt and pepper. Garnish with chopped fresh cilantro (optional) and serve with cauliflower rice or your favorite low-carb side dish.
