Ingredients
4 servings
4chicken thighs
with bone, with or without skin
1onion
medium, finely diced
1 Tbsoil
or 2 Tbs depending on preference
1 tsplemon juice
or more depending on preference
salt
to taste
pepper
to taste
1 cupchicken stock
or veggie stock depending on preference
¼ cuppomegranate molasses
⅓ cupwalnuts
finely ground
brown sugar
optional
Instructions
Step 1
Sauté onion in oil until transparent in a sauté pan or Dutch oven.
Step 2
Brown chicken and then remove chicken from pan/pot.
Step 3
Add lemon juice, pepper, salt, and chicken or veggie stock and simmer for 15 minutes.
Step 4
Add pomegranate molasses and walnuts and simmer for 30 to 45 minutes either covered or partially covered so the sauce doesn't get cooked down completely.
Step 5
Add chicken and simmer for 15 to 30 minutes depending on how long it takes to cook the chicken.
Step 6
Taste and add brown sugar if too tart.
