drained and rinsed
1 x 14.5 ozdiced tomatoes
can, undrained
1 cupfrozen corn kernels
½ cupbrown rice
cooked, optional
¼ cupfresh cilantro
chopped
salt
to taste
pepper

Combine all ingredients except cilantro, salt, and pepper in a large pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
