Ingredients:
1 cup unsalted butter, softened
2 cups sugar
3 large eggs
1 tablespoon lemon zest
1/4 cup fresh lemon juice
1 teaspoon vanilla extract
3 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup buttermilk
2 cups fresh blueberries
Directions:
Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch cake pan.
Cream the butter and sugar together until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in lemon zest, lemon juice, and vanilla.
In a separate bowl, whisk together flour, baking powder, and salt. Add to the creamed mixture alternately with buttermilk, starting and ending with flour mixture.
Gently fold in blueberries. Pour batter into the prepared pan.
Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean. Let cool before serving.
