¼ cupvegetable broth
1 tablespoonred curry paste

ground coriander
¼ cupgreen beans
trimmed and halved
0.25red bell pepper
thinly sliced
¼ cupspinach
1lime wedge
for serving

Instructions
Step 1
Prep the fish: Cut the fish fillet into bite-sized pieces. Season lightly with salt and pepper.
Step 2
Simmer the sauce: In a saucepan, combine coconut milk, vegetable broth, red curry paste, ginger, turmeric, and coriander. Bring to a simmer and cook for 5 minutes, stirring occasionally.
Step 3
Add the fish: Add the fish pieces to the simmering sauce and cook for 5-7 minutes, or until cooked through and flakey.
Step 4
Veggie time: Add the green beans and red bell pepper to the pan and cook for 1-2 minutes, until slightly softened but still crisp.

Wilting finish: Stir in the spinach and cook just until wilted.
