1 cupsoba noodles
cooked
½ cupbell pepper
sliced
½ cupshredded carrots
½ cupcucumber
chopped
½ cupred cabbage
sliced
¼ cupfresh cilantro
chopped
¼ cupchopped peanuts
lime wedges

Peanut Sauce
¼ cupnatural peanut butter
2 Tbspsoy sauce
2 Tbsprice vinegar
1 Tbsphoney
1clove garlic
minced
½ tspginger
grated
¼ tspred pepper flakes
water

Instructions
Step 1
Cook the soba noodles according to package instructions and let it cool.
Step 2
In a large mixing bowl, add cooked soba noodles, sliced bell pepper, shredded carrots, chopped cucumber, and sliced red cabbage.
Step 3
In a small mixing bowl, whisk together natural peanut butter, soy sauce, rice vinegar, honey, minced garlic, grated ginger, and red pepper flakes.
Step 4
Thin the peanut sauce with water until it reaches a pourable consistency.
Step 5
Drizzle the peanut sauce over the bowl and toss everything together until well combined.
Step 6
Sprinkle chopped fresh cilantro and chopped peanuts over the top and serve with lime wedges.
