LAHMAJUN! Or Lahem bi ajeen!
My MOST remade recipe LAHMAJUN! Or Lahem bi ajeen! RECIPE⬇️
INGREDIENTS-
18 pieces Uncooked flour tortillas. Available at Costco, Vons, and Ralph’s markets.
2 lbs ground beef or lamb. I used 85/15 organic beef.
1 bunch parsley
1 bunch fresh mint (Not dried)
2 large tomatoes
1 lg onion
1 jalapeño or serrano chili
4 cloves garlic
3 Tbsp tomato paste
1 Tbsp pepper paste
2 tsp kosher salt (if using other kinds of salts, use less!)
1/2 tsp black pepper
1 tsp Aleppo pepper
Non stick spray. PAM or avocado spray.
DIRECTIONS-
Preheat oven to 450F convection setting is preferred
Wash and dry parsley and mint and add to the food processor. Pulse until finely chopped. Add to the beef.
Next add the rough chopped tomatoes, onions, jalapeño and garlic to the food processor. Pulse until no longer chunky. See video. Pour onto beef mixture.
Add tomato and pepper paste, salt, pepper, and Aleppo pepper. Combine with hands. Mixture should be wet.
•••At this point I taste the mixture and adjust seasoning if needed. If you can’t eat raw beef, cook a small amount in a pan and check seasonings.
Now take 3/4 of a cup or so of the mixture and press a thin layer onto the tortilla. Make sure to get all the way to the edges.
Spray your baking sheet with cooking spray and add the lahmajun to the pan. Bake about 12-15 minutes or until crispy. Every oven is different, so bake accordingly.
Remove and place on cooling racks. Serve with lemon juice, grilled veggies, fresh herbs, and tahn!
