Harissa roasted cherry tomatoes, juicy and bursting with flavour
Harissa roasted cherry tomatoes, juicy and bursting with flavour on a very creamy, very garlicky bed of white beans. Just a handful of ingredients which created an absolute delight of a meal. Perfect for whilst the weather is very cold!
Ingredients:
700g cannellini beans
1 shallot
6 cloves of garlic
Quarter of a stock cube
300g cherry tomatoes
1 heaped tbsp harissa paste
Olive oil, salt and pepper
Method:
Preheat the oven to 190C. Mix the tomatoes and harissa with a glug of olive oil and salt, roast in the oven for 20-25 minutes, or until just bursting.
Meanwhile, fry diced shallot in olive oil for 5 minutes, followed by the minced garlic for another minute before adding in the beans and their juice and a quarter of a stock cube. Simmer for 5-10 minutes until thick and season to taste. Top with the bursting tomatoes, drizzle over any leftover tomato, harissa oil and top with parsley.
