Chicken & Mushroom Gnocchi
Creamy Chicken & Mushroom Gnocchi
The creamiest, cheesiest CHICKEN AND MUSHROOM GNOCCHI. Ready in under 30 minutes! Recipe below. SAVE
Ingredients -serves 4
2 tbsp Olive oil
1 tbsp Butter (optional)
500g Fresh Gnocchi
2 Chicken breasts, cut into small pieces or your own preference
150g Chestnut mushrooms, sliced
100g Baby spinach, roughly chopped
1 Shallot, finely diced
1 tbsp Garlic, minced
1/2 cup Double or Single cream
50g Reduced fat Mozzarella, grated
1/2 tsp each of the following - ground black pepper, chilli flakes, dried thyme, dried oregano, paprika
1 cup Chicken stock
Salt, to taste
2-3 tbsp Fresh parsley, finely chopped
Method
Step 1 - Cook the gnocchi, as per packets instructions. Set aside.
Step 2 - In a large pan, on medium heat, add the Olive oil and butter. Once hot, add the onion and sauté for 2 minutes, now add the garlic and sauté until fragrant. Add the chicken and all of the dry seasonings (not the stock powder) and sauté for a 5 minutes. Next, add the spinach and mushrooms and sauté for a further 5 minutes.
Step 3 - Turn the heat down to low, and add the cream, chicken stock. Mix well to combine. Add the mozzarella and gnocchi and stir through until the cheese has melted and the sauce has thickened slightly Top with fresh parsley and serve! Enjoy!
