Tortelloni Pesto Primavera w/Chicken

Instructions

Boil Water

Step 1
Bring a large saucepan of salted water to a boil.

Prep cheese & veggies

Step 2
Meanwhile, finely grate Parmesan.
Step 3
Trim and discard ends from squash, halve lengthwise, then cut crosswise into 1/4 inch half-moons. Halve Tomato lengthwise, then cut into 1/2 inch pieces.

Cook the chicken

Pat the chicken dry with paper towels, season with salt and pepper.
Step 5
In a medium pan, heat 2 tsp of olive oil on medium-high until hot.
Step 6
Add the Seasoned chicken in an even layer. Cook without stirring 3 to 4 minutes, or until lightly browned.
Step 7
Add squash and a pinch of salt, then cook, stirring, until lightly golden, 2-3 minutes. Add tomatoes, cook, stirring until squash is tender, 1-2 minutes more.

Cook Pasta

Step 8
Add tortelloni to saucepan with boiling water and cook, stirring occasionally, until al dented, 2-3 minutes. Reserve 1/4 cup pasta water, then drain and return to pot.
Step 9
Stir in Pesto and 2 tbs of reserve pasta water, tossing to coat. If too dry, add additional tbs pasta water at a time as needed.

Finish and Serve

Add chicken, squash and tomatoes to the pot with Pesto and tortelloni, toss to combine, season with salt to taste.
