For the filling
450gground beef
0.5white onion
large, diced
1 packettaco seasoning
store-bought, or you can make your own
1tomato
diced
1 packageflour tortillas

1 packagetostadas
or 1 bag of Doritos
½ cupsour cream
1 cupshredded cheddar cheese
or another type
1 cupshredded mozzarella cheese
For the chimmichurri
3 clovesgarlic
finely chopped
1red hot pepper
finely chopped
1 partparsley fresh
1 partcoriander
fresh
oregano
dried, or fresh to taste, less than the other herbs
extra virgin olive oil
red wine vinegar
or substitute for white and some lemom juice
lime juice
to taste, optional
For the coleslaw
300 grred cabbage
1carrot
2 Tbspmayonnaise
mustard
white wine vinegar
to taste
lemon juice
to taste

For the sour cream dip

Instructions
Step 1
In a large saucepan, sauté diced onion until it becomes translucent. Add in ground beef and cook. Season with salt and pepper to taste. Once cooked, add your taco seasoning.
Step 2
Make the chimmichurri and cole slaw by chopping and mixing all ingredients.
Make the sour cream dipping sauce.
Step 3
Take one large tortilla and use a bowl (flipped over in the center) to cut out a smaller, circular tortilla shell. You can also buy smaller soft tortilla shells at the supermarket and use those.
Step 4
Take another large tortilla shell and place two heavy spoonfuls of ground beef in the center. Add layers in preferred order.
Step 5
On top of the fillings, place your smaller, cut-out soft shell tortilla and begin to fold your large tortilla into the center to create the wrap. Sour cream can work a bit as a glue to help with sticking the tortillas together.
Step 6
Once done, flip it over and place face-down into the center of a heated saucepan so it can crisp up. Slice in half and serve with the sour cream on the side, and if you like, some extra cole slaw.
