Instructions
Step 1
First, prepare the seasoning blend in a small bowl for the chicken breasts. Set aside.
Step 2
Mince garlic, chop fresh parsley, grate the parmesan, and set aside.
Step 3
Slice the chicken breasts lengthwise creating 4 pieces in total, as this will allow the chicken to cook quicker. Once sliced, coat the chicken pieces in the seasoning blend on all sides.
Step 4
In a preheated pan on medium low heat, melt butter and olive oil to cook the chicken with. Sear on both sides for about 2-3 minutes, or until cooked through and golden on both sides. Set aside on a clean plate to rest.
Step 5
Before making the alfredo sauce, make sure you a have a large pot of water at a rolling boil that is salted well ready to go. Add pasta of choice and cook until al dente, according to its package instructions.
Step 6
To make the alfredo sauce, on low heat using the same pan with the leftover chicken bits and spices, melt another tablespoon of butter and sauté the minced garlic, until fragrant, about a minute or so. Pour the heavy cream and stir. Add the cream cheese and parmesan, stir and break down the cheese with a wooden spoon until it is melted through. Season to taste with salt and pepper at this point.
Step 7
Add the starchy pasta water and stir in to thin it out a bit. At this point the pasta should be done cooking and using a straining ladle, add in the pasta straight into the pan. Coat the pasta well with the creamy alfredo sauce.
