Instructions

Step 1
Add all the onion, carrot and celery to a pot with the olive oil and cook until softening. Then add the peas and corn and garlic and continue to cook for another few minutes.
Step 2
Add the herbs and paprika and mix to combine before adding the tomatoes, and lentils and incorporating well.
Step 3
Add the stock and bay leaves before bringing to the boil and simmering for 25 minutes until the lentils are cooked.
