Preheat oven to 275

Season chuck roast all over with salt, pepper, and a little garlic powder

Heat 12" cast iron pan over medium-high heat

Sear chuck roast on two sides, remove from pan

Sauteed the onion until soft
Step 6
Add beef broth and deglaze pan

Add butter

Simmer until butter is melted

Add dried rosemary and add the roast back to the pot

Put in the lid and roast in the oven for 2.5 hours

Remove roast from pan and mix in cornstarch to make gravy
