Incorporating Veggies into your sandwich is a great delicious way to eat more veggies . This sandwich will keep you full for ages and it can be made with vegan pesto and mozzarella to keep it vegan.

Step 1
Slice the pepper and courgette lengthways then brush with a little oil and get on to a griddle pan. Fry until softened on both sides and it has lovely char marks giving it loads of flavor then put on a plate and set aside

Toast the bread - I like to use a seed bread Then spread the pesto on each one add some
Mozzarella and add the grilled veggies seasoning each one to taste with salt and black pepper . Add sliced tomatoes and more mozzarella on top then sandwich then and get them back on the griddle pan on medium heat

Step 3
I Place a Heavy pan on top to press the sandwich together and get the bottom nice and crispy - cook until the cheese gets a little melted then serve and enjoy
