Instructions
Step 1
Spread each side of the bruschetta bread with 1 tbsp olive oil. Toast until golden brown.
Step 2
Chop the tomatoes, garlic and basil.
Step 3
To a bowl add the tomatoes, garlic, basil, salt, pepper and olive oil. Mix until well combined. Drain any excess water.
Step 4
Spread the bottom half of the bread with the basil mayonnaise. Lay the prosciutto slices on top.
Step 5
Then top with the arugula and tomatoe mix.
Step 6
Stack the other slice of bread on top and enjoy!
