Instructions

Step 1
In a medium-large sauté pan over medium-low heat, warm the olive oil for 1 minute. Add the pancetta and walnuts, and sauté until the pancetta becomes crispy, 2 to 3 minutes.
Step 2
Add two-thirds of the radicchio and sauté, stirring occa-sionally, for 3 to 4 minutes.
Step 3
Reduce the heat to low, add the Gorgonzola Dolce, stirring, and allow it to melt almost completely. Season with salt and pepper to taste.
Step 4
Meanwhile, in a large pot of boiling salted water, cook the pipe until al dente, drain, and transfer to the sauté pan.
Step 5
Quickly sauté for a minute, adding pasta water as necessary to bind the ingredients.
Step 6
Plate in four bowls. Finish with the Parmigiano and the remaining radicchio.
