Baked Mediterranean Tofu Feta Pasta

Instructions

Step 1
Place tofu in a large baking dish. Cut cross-cross or hatch pattern into the top to allow flavors to penetrate.
Step 2
Combine nutritional yeast, olive oil, oregano, salt, pepper, lemon, pepper, and garlic and pour cover the tofu, making sure it gets into the nooks and crannies you created.
Step 3
Spread your veggies around the tofu in the dish. Add in remaining spices and mix in.
Step 4
Cover with foil and bake at 400 degrees for 15 minutes. Meanwhile, cook your pasta a minute less than normal. Remove the foil and bake for 10 minutes longer.
Step 5
Pour the cream in and gently smash the for, cream, garlic, and cherry tomatoes together to create the sauce. Assemble the pasta and basil. Squeeze over the lemon juice.
