Instructions
Step 1
Chop potatoes into wedges, mix with olive oil, salt and pepper. Put in one tray of air fryer.

Drizzle chicken breasts with olive oil and dried thyme

‘Roast in air fryer’
Step 4
Chop red onion into wedges, carrot into batons and red pepper into strips. Drizzle with olive oil, season with thyme and parsley

Roast in oven for remaining time
Step 6
Add boiling water to chicken stock and stir. Add mixture to pre-heated frying pan and bring to simmer.

Add chilli jam and stir well to dissolve. Bubble mixture until thickened

Combine potato wedges and veg and spoon onto plates. Slice chicken breast into slices and add to plate. Drizzle over sweet chilli glaze.
