Instructions
Step 1
Preheat oven to 325°F (163°C). Line a muffin tin with paper liners.
Step 2
In a bowl, mix chocolate cookie crumbs with melted butter. Press the mixture into the bottom of each muffin cup to form a crust.
Step 3
In a large mixing bowl, beat the cream cheese and sugar until smooth. Mix in Bailey’s Irish Cream and brewed coffee.
Step 4
Add eggs, one at a time, beating just until blended. Stir in the melted chocolate chips.
Step 5
Divide the mixture among the muffin cups, filling each about 3/4 full.
Step 6
Bake for 20-25 minutes, or until the centers are just set. Cool in the pan on a wire rack for 10 minutes, then remove from the pan and chill in the refrigerator for at least 2 hours.
Step 7
Before serving, garnish with whipped cream and chocolate shavings.
