Ingredients

1 cupgrits
3 cupswater
or chicken broth
¼ teaspoonsalt
1 tablespoonunsalted butter
1 poundskinless boneless chicken breast
1 tablespoonflour
salt
to taste
pepper
paprika
2 tablespoonsavocado oil
1 cupmushrooms sliced
⅔ cupscallions
sliced
1 ½ cupssugar snap peas
trimmed and stringed
½ cupwhite wine
3 tablespoonswater
or chicken stock
1clove garlic
large, crushed
fresh parsley
chopped for garnish
Instructions
Step 1
Cook grits, set aside but keep warm.
Step 2
Cut chicken into strips, season with salt & pepper and dust with flour.
Step 3
Heat oil in a skillet, sauté chicken strips until golden and cooked through. Remove to warm plate.
Step 4
Add scallions and peas and sauté until wilted but not overcooked. Return chicken to pan, add water and garlic. Toss util hot.
Step 5
Serve over cooked grits.
