Instructions

Step 1
BOIL IT
Step 2
Chop potatoes 2cm.
Step 3
Place in a pot and cover with hot tap water and a pinch of salt. Bring to a boil with the lid on.

Remove lid and drop heat to medium.
Step 5
Cook for about 15 mins, until tender.
Step 6
Bring a pot of water to the boil.
Step 7
Add rice to pot of boiling water.
Step 8
Boil, uncovered, for about 20 mins, until grains are tender. Drain well through a sieve.

COOK IT

Chop onion. Heat a drizzle of oil in a pan on medium-high heat.

Add onion and cook for 2-3 minutes, until soft.

Add curry paste and cook for 1 min, until fragrant. Add coconut milk. Bring to a simmer and add prawns, potatoes and green beans

and cook for 3-4 minutes, until prawns are cooked through, and vegetables are tender.
Step 14
Season to taste with salt and pepper.

EAT IT

Serve rice and prawn curry in bowls.
