Step 1
MASH IT
Step 2
Dice potatoes and carrot 2cm.
Step 3
Add to a pot and cover with hot tap water and a pinch of salt. Bring to a boil with the lid on.

Remove lid, then drop heat to medium.

Cook for about 20 mins, until tender.
Step 6
Drain well and return to pot with milk and butter.
Step 7
Mash until smooth and season to taste with salt and pepper.

FRY IT

Grate cheese and set aside.

Thinly slice onions.
Step 11
Heat oil in a frypan on medium-high.

Cook onions and sugar for 8-10 mins, until soft and caramelised. Transfer onions to a bowl and save pan for next step.

ROLL IT

While onions are cooking, mix all meatball ingredients (except oil) together.

Use a Tbsp measure and damp hands to shape mixture into balls.

Heat oil in saved pan on medium-high.

Cook meatballs, in batches if needed, for about 10 mins, turning frequently, until cooked through.

Return all meatballs to pan along with onion, flour, beef stock and water measure. Stir to combine and simmer for 2 mins, until sauce has thickened. Sauce too thick? Add a splash of water!

Sprinkle with cheese and cook until melted.

Season to taste with salt and pepper.

BOIL IT

Boil a pot of salted water.

Cut broccoli into florets and dice stalk.

Place broccoli in pot of boiling water and cook for 3 mins, until bright green and tender. Drain and return to pot.

Season to taste with salt and pepper.

Top mash with saucy meatballs and onions. Serve broccoli on the side. Dig in!
