One Pot Chicken and Chorizo Jambalaya
This is my quick and easy chicken and chorizo Jambalaya one pot, the perfect one pot wonder this is a great mid week dinner recipe that is so easy to put together and tastes delicious. Lets go:

Ingredients
4 servings
400gboneless chicken thighs
100gspicy chorizo
150gdried basmati rice
250mlchicken stock
400gtinned tomatoes
2 Tbspcajun seasoning
1 Tbspgarlic
1onion
large, chopped
2bell peppers
Garnish
Instructions
Step 1
- In a medium heated pan add the chorizo and cook until crispy, add the chicken thighs to the pan and cook for a further 5-7 minutes until fully cooked through then remove from the pan.
Step 2
- To the same pan add the onions and garlic sauté until softened for 5-7 minutes, add the peppers and 2 tbsp cajun seasoning to the pan season well and cook for a further 5-10 minutes.
Step 3
- Add the chicken and chorizo back to the pan then add the chopped tomatoes, stock, rice, season well then mix together and place on a low simmer for 20-25 minutes until the rice has cooked through an absorbed the liquid.
Step 4
- Garnish with fresh lemon wedges, parsley and tuck in, enjoy!
