Baked Mexi Chicken Beans and Rice Dinner

Really inexpensive and easy to make from just a few ingredients just need an oven, rice cooker, and instant pot

Instructions

Step 1
pinto beans, half the tomatoes, half the stock, half the serrano, & bacon, high pressure in instant pot for 50m
Step 2
mix brown sugar, smoked paprika, chili powder, pepper, garlic & onion powder, oregano, thyme
Step 3
Preheat oven to 375. Lay drumsticks in baking dish, throw in diced white onion and half of a diced serrano.
Step 4
Make a paste with the spices, olive oil and minced garlic and slather the drumsticks on all sides
Step 5
Bake at 375 for 60 min if slightly frozen otherwise bake at 350 for 45-50m
Step 6
Add rest of stock and canned tomatoes to rice cooker with white rice, add chili powder and oregano
Step 7
When rice is done, add olive oil and mix around w wooden spoon to fluff
Step 8
Serve w fresh chopped cilantro, lime, and fresh flour tortillas
