Instructions
Step 1
Sweat leeks and onion in butter until limp. Add potato slices, broth, and salt.
Simmer, stirring occasionally, until very tender.
Cool.
Purée base in a blender, in batches. Freeze the base.
Thaw the base as needed, blend to break up freezer-caused crystals, and thicken to proper consistency with milk and cream. Heat to a simmer and garnish with croutons, or chill and serve with chopped chives.
